This recipe comes from a foody couple in Montana (friends of my parents). I have made this several times in the last few months and everyone LOVES it. Like all soup recipes, you can amend the ingredients (change the peppers for different flavor, or include the seeds to spice it up a bit). It tastes even better the next day – makes a great "leftover" meal!
Ingredients:
1-2 lbs. cubed chicken (raw)
1 lb. ground turkey
1 of ea. pepper: jalapeno, serano, habanero
1 small onion, diced
1 clove garlic
1 can green chilis
3 cans Great Northern beans
1 pint heavy cream
mixture, 2 c. whole milk & 1/2 c. flour
1 tsp ea.: garlic powder, onion powder, cumin, chili powder
1/2 c. chopped cilantro
1 can chicken broth
Directions:
- Saute peppers, onion, garlic, chilis in butter until tender.
- Add chicken, turkey, seasonings, and cilantro. Cook through.
- Add chicken broth and beans. Simmer 15 minutes.
- Add heavy cream and thicken with milk/flour mixture.
